Phytic acid CAS 83-86-3 , also known as inositol hexaphosphate, serves as the main storage form of phosphorus in various plant tissues (especially rice bran and seeds). Its structure is an inositol derivative formed by the phosphorylation of all six hydroxyl groups of inositol. However, humans and non ruminant animals cannot digest phytic acid, so it is neither a source of inositol nor a source of phosphate for the diet.

Application
The food industry is used for the preservation and color protection of fruits, vegetables, and aquatic products, as well as for metal rust and corrosion inhibitors
It has antioxidant and chelating properties and can be used for antioxidant purposes in fruit and vegetable products, fruit and vegetable juice beverages, edible oils, and meat products. The maximum usage amount is 0.2g/kg, and it can also be used for the preservation of shrimp. It is used in moderation according to production needs, with a residual amount of 20mg/kg.

When manufacturing fermented products called Chemicalbooks, adding 0.01% to 0.05% of the raw material can shorten fermentation time, improve color and aroma. The final content in the finished product should be ≤ 0.001%~0.02%. It is also used to prevent boiled shellfish from turning black, juice fading, crab meat from forming green spots, and canned seafood from producing glassy crystals of ammonium magnesium phosphate.
A mineral chelating agent that can combine with minerals to form mineral phytate complexes. It can also form a conversion coating by complexing with metal ions bound to the surface of magnesium alloys, thereby improving the resistance of magnesium alloys to corrosion.
