Nature
Ferrous gluconate is a yellow gray or light yellow green crystalline particle or powder with a slight caramel odor. Soluble in water, 5% aqueous solution is acidic and almost insoluble in ethanol, with a theoretical iron content of 12%. Ferrous gluconate is easily absorbed, has no stimulation or side effects on the digestive system, and has no impact on the sensory performance and flavor of food. It can also be used as a drug to treat anemia.
Application
According to China’s “Hygienic Standards for the Use of Food Nutritional Fortifiers” (GB14880-2012), ferrous gluconate can be used as a color fixative for pickled vegetables (only olives), with a maximum usage of 0.15g/kg. According to Japanese regulations, this product can be used as a substitute for dairy products, weaned foods, and maternal formula.
