CAS 28211-04-3 Epsilon Polylysine
ε-Polylysine (CAS 28211-04-3, alias ε- Poly L lysine, or Epsilon Polylysine etc), abbreviated as ε- PL) is a homomonomer polymer produced by Streptomyces albicans through liquid deep aerobic fermentation, containing 25-35 L-lysine residues. It has a significant inhibitory effect on Gram positive and negative bacteria, yeast, mold and other microorganisms, and is widely used in industries such as food, daily chemical, and pharmaceutical. This substance can be digested and absorbed by the human body, breaking down into the necessary lysine for the body.
Characteristic
1. Wide antibacterial spectrum: can effectively inhibit Gram positive and negative bacteria, yeast, molds, and other microorganisms.
2. High temperature resistance: It does not decompose in a high-temperature environment (121 ℃, 30 minutes), so it can participate in the product heat treatment process and be processed and produced together with raw materials.
3. Strong water solubility: ε- Polylysine is easily soluble in water with a solubility of at least 500 g/L.
4. Wide range of pH use: under pH 2-9 conditions, ε- Polylysine has strong antibacterial activity, which can compensate for the low activity of other preservatives under neutral and alkaline conditions.
5. Strong synergy: ε- Polylysine, as a new type of food preservative, has good antibacterial effects when used alone. When used in combination with other food additives (such as acetic acid, ethanol, glycine, organic acids, etc.), it can synergize and greatly improve the antibacterial effect.
6. High security: ε- The acute toxicity test LD50 of polylysine is 5g/kg, which is equivalent to table salt. After the human body ingests polylysine, it can be degraded into lysine nutrients, which are absorbed and utilized.
